Fruit Salsa

When we first moved to Edwards, I "knew" there was no way I was going to ever love any part of this place. That has since become the furthest thing from the truth + one of my most favorite parts is RECIPE NIGHT! Once a month, a bunch of us girls from all over the world (France, Belgium, and all over the US) get together and share recipes! We each bring our item (which follows a theme) and then afterwards we combine all of the recipes into a giant email. We end being SO full even after just taking a quarter sized serving of each item + laughing (+ crying) until our stomachs hurt! It's the best night of the month. Hands down.

The theme for February? Red and Pink of course! So I decided it was the perfect opportunity to make Fruit Salsa and boy is it so yummy! We stole it from a family member of some of our family friends (it's not as confusing as it sounds) + it's best served with Costco's Brownie Brittle or Cinnamon Sugar Chips! However, even though I went to Costco just for Brownie Brittle, there were so many good deals and amazing produce that I left... without the Brownie Brittle. I was so bummed. So for tonight's recipe night, it'll be served over brownies! I think it would be killer with vanilla ice cream too!



Fruit Salsa

Chop:
Strawberries- I did half of a Costco container
Raspberries- Full Costco container
2 Apples
3 Nectarines
4 Kiwi

Chop them into tiny pieces, (although a big chunk of fruit is the best thing to find in this salsa,) Then combine with:

2 tbsps Jam - I did homemade raspberry jam
1 tbsp white sugar- Let's be honest though, I did two.
1 tbsp brown sugar

Mix it all up and chill for a little bit and serve over brownies with ice cream! Or with brittle or cinnamon chips!
